Uwind

The main characters are Connor, Risa, and Lev, who are each scheduald to be unwound, the process of having your body taken apart and used by other people, on condition that every part is used so that life tecnically still goes on. Unwinding was legalized after the second civil war, or the Heartland war. You can only legally be unwound between ages of 13 and 18, although Tithes, people who are litterally born to be unwound as a holy offering of a family who's religion says that they have to give 10% of everything (even children) as a "holy" offering. Connor, Risa, and Lev go AWOL, make their way to an antique store to be smuggled out to the graveyard, a place for scrapped planes, to hide there. They eventually end up going to the "harvest camp" or unwinding facilities.
